The envelope and the climate
- The target: ~55°F and 60–65% RH. Stable beats perfect — a steady 58°F outperforms a room that swings from 50°F to 68°F. The accepted humidity range is 50–70%; 60–65% is the sweet spot.
- Insulation + vapor barrier. Heavy insulation — typically closed-cell spray foam, roughly R-19 to R-30 in walls and R-38 to R-50 in ceilings — with a vapor barrier on the warm exterior side. The vapor barrier stops warm, moist air from migrating into the walls and condensing, which is what causes mold.
- A sealed, insulated door. An exterior-grade, fully gasketed door. A standard interior door leaks conditioned air and undoes everything else.
- A dedicated cooling system. A wine cellar cooling unit — not HVAC, not a beverage fridge — sized to the space. Standard air conditioning strips out humidity; wine systems hold both temperature and moisture.
Two finishing rules round it out: no UV light (use LED or incandescent, and keep the cellar dark when idle), and hard flooring — concrete, tile, or stone — never carpet, which traps moisture and breeds mold. Bottles store on their sides so the cork stays wet.
